The main problem with that is humans and the races of equestria are massively different. Yes a dragonborn is extremely different from a human but other than the tail gets in the way in specific circumstances it won't hinder the mechanics; the scales can be overcome the same way skin can, so maybe add +2 to 'natural armor' and in addition to the +2 to STR you're pretty much good -- they're still a size medium, unless your system/setting needs much finer control such that being 7'2" keeps getting in the way because all the furniture is build for creatures 4'11", which is still "medium" by DnD measures.
With ponies ... how high can a pterippus fly? How much mass can an average 'peasant' unicorn levitate? How many items? Does literally EVERY hippogryph have a sliver of their transmutation stone, IE they all can switch at will between 5g-seapony and hippogryph?

My experience clashes with yours, though I see the wisdom of these words.
The two starting-points that I didn't wildly handwave, came directly from a NaNoWriMo 'novel' I had written, and I just plunked the players about two days behind the protagonists from that story.
No, they didn't uncover everything the protagonists did, and it wasn't all that long before they diverged completely and I had to invent new stuff going on that hadn't been in my story because the players weren't over where "the action" was.
Now, aside from that, I've just watched the other play-by-post on that site implode, and I kinda hope it's permanent because the trainwreck was starting to get painful to watch.

As you read above, I expect to use PF1, though it might just come up that the players that show up, want to do this in the FoE wasteland. There's already a decent system for that, which is (IIRC) d10 based rather than using all the mathrocks at the same time.
